Derek Marshall

On leaving school, Derek joined a training scheme at the famous Fountain Restaurant in Glasgow. He soon discovered he had both an aptitude for cooking and an enthusiasm to learn: His career was soon on the move.

Valuable learning years, amassing experience in France and the Channel Islands led him back to Glasgow, culminating in his appointment as Head Chef at Rogano. A brief sabbatical to Spain followed, where he broadened his knowledge of Mediterranean cooking and in particular, the art of cooking fish.

A further return to his roots in 1986, led to Derek’s appointment as Head Chef at Papingo Restaurant and since its inception in 1998, as Head Chef and co-proprietor at Gamba Seafood Restuarant.

Derek is also co-owner of Urban Bar & Brasserie in St Vincent Place, Glasgow, where his passion for ‘brasserie style’ cooking is epitomised in the menu which he creates and executes with his long standing kitchen brigade.
